Eat, Enjoy & Lose with me - recipe share


Healthy delicious recipes needn't be difficult to come by.
Weight loss is hard enough. Lets make this easy.

This weeks Recipe:

Basil chicken with tomato and zucchini risoni.

Guilt free cooking doesn't get much easier than this.
Packed full of fresh veggies, basil and whole grains it promised to be a hit.

The ingredients:
in no particular order. there are no favourites here...
Rocket, Basil, lemon, risoni pasta, olive oil
green beans. zucchini. grape tomatoes chicken stock and fresh chicken breasts. Oh and I totally missed the garlic.
Gotta have the garlic.


Now lets get cooking.
Set a large pot of salted water to boil.
once its got a good bubble on add the risoni. 
Cook for around 11mins or until just tender.


Then prepare the chicken.
Be warned you are going to have to handle raw meat.
But your tough, you can do it.
Slice the chicken breast in half and lay in a shallow dish.
Add lemon rind, lemon juice, basil, garlic and olive oil and toss to coat.


heat a large non stick frying pan or grill over a medium-high heat.
add chicken and cook for approx two minutes each side.
By now its starting to smell OH SO GOOD!

Once it is cooked transfer to a plate and cover to keep warm.

In yet another pot... 
(or if your like me use the pot from the drained pasta)
heat a little olive oil
add the beans zucchini and tomatoes, toss to coat and cook for around two minutes.
add some chicken stock, the drained risoni 
and cook stirring for two minutes or until heated through.
Stir through some more basil and season with salt and pepper.
Serve, eat and enjoy.


I loved this meal. Great flavours, full of goodness and I felt good about eating it. The beauty of this meal is that it can be prepared in advance and is a quick cook for busy nights.

I would pop this onto my weekly food list however my girlies would be unimpressed. I plan on making this again, perhaps when friends come for dinner or when the the girlies aren't here. 

So here is the recipe:

Basil chicken with tomato and zucchini risoni 
Serves 4
Pro points per serve 9

Ingredients

1 Cup of risoni pasta
3/4C fresh basil leaves
4x120g skinless chicken breasts,
   fat trimmed and halved horizontally
1tsp finely grated lemon rind
2Tbsp lemon juice
1 garlic clove crushed
1 Tbsp olive oil
2 medium zucchini, thinly sliced
300g green beans, trimmed
200g grape tomatoes
1/4C chicken stock
rocket to serve.

Method

  1. Cook pasta in a large saucepan of boiling salted water. Until just tender. drain.
  2. Meanwhile finely shred 1/4C of basil. Place chicken, lemon rind, juice, basil, garlic and half the oil into a bowl. Season with salt and freshly ground black pepper. toss to coat.
  3. Lightly spray a large non stick fry pan and heat over a medium-high heat.Cook chicken for two minutes each side or until cooked trough. transfer to a plate, cover to keep warm.
  4. Heat remaining oil in a large saucepan over a medium-high heat. Cook zucchini, beans and tomatoes stirring for 2 minutes or until vegetables are softened.Add stock and risoni and cook, stirring for two minutes or until heated through. stir in remaining basil and season with Salt and pepper. Serve risoni with rocket and chicken.

    Awesome idea. My diet starts today, have a certain bridesmaid dress to get into in less than 2 months. Eeek

  3. I've made this one! :) It was yum but next time I make it I think I'll use a fair bit less lemon as the chicken ended up reminding me a bit of fish.

  7. That looks delicious!! I have had trouble finding fresh herbs over here. I definitely give this a go though - is there a substitute for rizoni?? Not sure that i've seen that either! I never think too much about my cooking in terms of if the kids would eat it or not - and as a result they now eat pretty much anything I serve up, otherwise they go hungry! haha. mean mamma! However Theo has developed a taste for all types of greens which would not have happened!
